TRADITIONAL CLASSIC AND OUR OWN TAKE

Peking duck in Copenhagen: a traditional classic and our own take on it

At Royal Garden, we’ve always believed that the best dishes take time. Our Peking duck is the traditional imperial classic, prepared with care over many hours. Our Crispy Duck is our own creation, inspired by the same Chinese culinary tradition. Both are made with the same dedication to craft we’ve brought to everything since 1999.

A DISH FROM THE IMPERIAL ERA

Peking duck: a dish from the Imperial Era

Peking duck has its roots in the imperial kitchens of Beijing, where it was served at court for centuries. Since then, it has become a national symbol of Chinese culinary culture and one of the great classic dishes in the world.

At Royal Garden, we prepare our Peking duck over many hours. The duck is marinated, dried, and slow-roasted in the oven until the skin is golden and crispy and the meat is juicy and tender. It’s not a dish you rush. And it’s not one we rush either.

ROYAL GARDEN'S OWN CREATION

Crispy duck: our modern take on a chinese tradition

Crispy duck is not a traditional Chinese dish. It’s Royal Garden’s own creation, inspired by the best of Chinese culinary tradition. The duck is marinated in a blend of aromatic spices and slow-cooked, then briefly deep fried to achieve a golden, crispy skin. The meat is served in strips alongside that crispy skin. The result is a richer, more intense, and more aromatic experience.

HOW IT'S SERVED

Pancakes, hoisin sauce, and spring onions

Both dishes are served the same way. You get thin, soft pancakes, our housemade hoisin sauce, fresh cucumber cut into strips, and spring onions. You spoon some filling onto a pancake, fold it up, and eat. It’s one of the most social and informal ways to eat, and a central part of Chinese dining culture.

Our hoisin sauce is made from scratch in our kitchen. It’s sweeter, more complex, and less salty than most store-bought versions. It’s what ties the whole dish together.
