Every dumpling is shaped and folded by hand by chefs with deep experience in Cantonese cuisine. From the hand-worked dough to the carefully seasoned filling, there’s a lot more to it than just wrapping something up. It’s about getting the proportions right, the folds precise, and the texture exactly where it needs to be. You can see the craft in the shape. You can taste it in every bite.

We serve dim sum the way it’s done in Guangdong and Hong Kong: each dish comes out when it’s ready. There’s no fixed order of appetizers, mains, and desserts. Instead, the meal unfolds naturally as you share and taste your way through the dishes at your own pace.

The classics you need to know

At Royal Garden, we serve over 30 different dim sum. Below you’ll find the classics that show up in every Cantonese dim sum restaurant in Hong Kong and Guangzhou. Get to know them here, and you’ll never feel out of place with a dim sum menu again.

Dim sum falls into three main preparation styles. Steamed dishes are the most traditional and include crowd favorites like har gau, siu mai, and char siu bau. Fried dishes like ham sui gok and char wantan bring crispy texture and bolder flavors. Cheung fun is its own category entirely: fresh rice noodle rolls, soft, silky smooth, and served with sweet soy sauce.

Steamed dishes are the foundation of any dim sum experience and the first thing people use to judge a restaurant.

Fried favorites

Fried dishes bring crunch and bold flavor to the table, and they’re an essential part of any complete dim sum spread.

Cheung Fun

Cheung fun are thin, steamed rice noodle rolls wrapped around a filling and served with sweet soy sauce. Soft, smooth, and almost silky in texture. It’s one of the most delicate dishes in Cantonese cuisine, and how well a kitchen handles it, says a lot about their level.
